Chawanmushi(茶碗蒸し):Japanese steamed egg pudding
ingredients:
2 eggs (100g)
200cc Dashi (Japanese soup stock)
1/2 tablespoon dashi soy sauce
1/2 tablespoon mirin (sweet cooking rice wine)
Pinch of salt
Tare (sauce)
30cc water
1 tablespoon soy sauce
1 tablespoon sugar
1/2 tablespoon potato starch (dissolved in water)
Mustard or Wasabi As much as you like
Recipe:
1.Make the custard mixture by combining the eggs, dashi, and condiments.
2.Steam chawanmushi in a pot, a steamer basket
3.Make Tre in a small saucepan, water, sugar, and soy sauce to a boil.
4.Once simmering, add potato starch dissolved in water and stir.
5.Pour over steamed chawanmushi
6.Top with wasabi or Japanese mustard, if you like.
