Tori Tsumire(鶏つみれ):Chicken pieces grilled
ingredients:
Chicken cartilage 50g
Minced chicken thigh 150g
1/2 egg
1 tablespoon potato starch
A pinch of salt
-Tare (sauce)
1 1/2 tablespoons soy sauce
2 tablespoons mirin (sweet cooking rice wine)
1 tablespoon sake
-Toppings
A few green onions
shichimi (seven spice) togarashi (red pepper)
Recipe:
1. Mince chicken cartilage and chicken meat.
2. Mix a pinch of salt, potato starch and beaten egg into 1.
3. Wrap about 40g of the meat from 2. onto skewers. 5 skewers are made.
4.Sear the skewers in a frying pan.
5. Pour the sauce over the skewers and reduce to a simmer.
6. place on a plate and sprinkle with green onions and chili peppers, if desired
