Spring

Inari-zushi (rice wrapped sushi),

ingredients:

4 pieces of deep-fried tofu
Rice...330g (1 cup)
white sesame seeds...1 tablespoon
(A) Boiling stock
300ml soup stock (bonito and kelp)
soy sauce...2 tablespoons
mirin (sweet cooking sake)... 2 tablespoons
sugar.... 4 tablespoons
(B) Sushi vinegar
Vinegar 1 and 1/2 tablespoons
Sugar 1 tablespoon
salt 1/2 teaspoon

Recipe:

1.Pour boiling water over fried tofu, drain off the oil, cut in half, and open into a pouch.
. Bring (A) to a boil in a saucepan, add \(1) and simmer over low heat for about 15 minutes, then turn off the heat and leave to cool and simmer.
3.(Mix (B) well to make sushi vinegar, add to the warm rice, mix as if cutting, add white sesame seeds, mix evenly, divide into 8 equal portions and lightly roll into balls.
4.Fill (2) with (3) and fold the mouth part and place on a plate.
