Simmered chicken and root vegetables

ingredients:

1 chicken thigh (250g)
1/4 teaspoon salt
4-5 dried shiitake mushrooms (15g)
1/2 carrot (80g)
lotus root ...150g
1 small burdock root (150g)
Konnyaku (konnyaku) ...150g
2 tablespoons sesame oil

【Dashi soup】
1 cup water
1 cup of water from dried shiitake mushrooms
3 tablespoons soy sauce
3 tablespoons mirin (sweet cooking rice wine)
1 tablespoon sugar

Recipe:

1. Cut all ingredients into bite-sized pieces.
Heat salad oil in a pan, add chicken and saute over medium heat until the meat changes color.
2.Add other ingredients and saute.
3.Add dashi soup, cover with a drop-lid, and simmer over medium-low heat for 10 minutes.
4. Add soy sauce, stir, cover with a drop-lid and simmer for 5 to 6 minutes.
Mix everything together, turn the heat to high, and let the cooking liquid evaporate a little.
